Macerated in Elephant gin for several months, the wild sloe berries add a light and sweet, yet richly rounded, fruity aroma. In order to retain the highest amount of aromatic flavour components, Elephant Sloe Gin remains unfiltered and can be identified by a natural cloudiness. The result is a red-tinted spirit that unfolds a complex bouquet bursting with flavours.

Aged for about a year in French and American oak barrels prior to final selection and blending. The bouquet opens with floral aromas with notes of dark chocolate, sweet spice and black cherry, followed by white pepper and liquorice. The palate is tight and elegant with blackberry and mineral notes to the fore; supported by supple tannins on the finish.

Puerto de Indias gin is crafted using olive wood-fired copper stills, originating from when the distillery was founded in 1880. Using natural water from their own spring, this gin is distilled with the finest quality botanicals including jasmine and vanilla to create its signature soft profile. Capturing the perfumed essence of springtime in sunny Andalusia, this all-natural aromatic dry gin is filled with an elegant bouquet of orange blossom, citrus, jasmine and vanilla.

The production begins with a twice distilled neutral spirit base. Ripe strawberries from the nearby Huelva region are macerated before being distilled. This process removes the colour however retains the natural flavours and aroma of the berry fruit. Each of the gin’s other botanicals which includes juniper and orange peel are then separately distilled on the estate’s original 1880s olive wood-fired copper still and blended along with the strawberry distillate. Lastly, a small amount of the macerated strawberries are added to the gin for its natural pink colour.

The three grains used in the whiskey is grown on the farm, though the exact mixture of corn, wheat, and barley used in the whiskey is kept secret. The whiskey is twice distilled using an antique copper pot still. Virginia oak and apple wood chips are left to soak in the whiskey for two months before it is aged in oak barrels for 4 years.

With primary herbal notes coming from rock samphire that they harvest by hand from the cliffs along the shore, it’s named after the Minke whales that swim in the ocean nearby. Canaïma as a concept was born from Simone’s trip to the Peruvian Amazon, where witnessing the destruction of the rainforest’s fragile ecology in real-time sparked in him a desire to take action. Dinner with the founder of Diplomatico Rum back in 2016 reaffirmed his need to “do something”, and the pair set about thinking how best to self-fund a new product while supporting and sustaining Amazonian communities.

Each bottle of 26 Moons is individually numbered and its contents have been matured for over two years in Madeira barrels; two years and two months to be exact, hence its name. It is later blended with Icelandic spring water until it reaches a bottled concentration of 42% ABV. The complexity of the production process for Martin Miller’s 26 Moons is unquestionably one of the secrets to its success and has made it a real object of desire, only acquirable for a very privileged few.

9 Moons cask aged gin comes from new French oak casks. They are filled with high strength Martin Miller’s Gin then aged for 9 months, or 9 Moons, in Martin Miller’s Gin’s barrel store in Borgarnes, Iceland. Then through a Solera Vat process of ageing and blending two different batches together, promises excellent consistency, whilst maintaining the complex and distinctive flavour profile.

After combining 17 botanical ingredients, sourced mostly from Yucatán and selected from other parts of Mexico (with the exception of juniper, which is the sole imported ingredient), the blend is macerated in corn neutral alcohol for at least ten days, it is then poured into a copper alembic handmade in Portugal and a highly perfected distillation technique produces an alcohol of the highest quality. The perfumed substance is then allowed to settle to be later mixed with pure cenote water, filtered and bottled.

About the botanicals – 8 of the 10 botanicals, are from the citrus family. They are lime, orange zest, kumquat, lemon zest (being used twice in the process actually), mandarine, pink & green grapefruit and lemongrass. The only non-citrus botanicals in the Gin, are juniper and cardamon. This – combined with the 7 distillations – makes a extremely fresh and light summer Gin, which is at the same time very complex.

An Dúlamán Irish Maritime Gin is distilled using the standard London Dry method; all of the ingredients, bar the carrageen moss, are infused within the pot. The moss is vapour infused, to preserve its freshness. This is a coastal inspired affair, with juniper, coriander, angelica, sweet orange, lemon and cassia joined by Donegal sugar kelp, carrageen moss, dulse, dúlamán and pepper dulse.
