Sweets for the sweet: Aberlour has always made a subtle, almost delicate malt, although with a goodly hit of sherry-barrel oak to keep it from floating away. The non-chill filtered version foregoes the fine filtering that prevents whisky from clouding up when you add ice. It also sucks out just a little bit of the flavor. Without it, the Aberlour is perceptibly richer. A malt for a winter’s evening by the fire.

Aberlour a'bunadh is a single batch single malt that is sourced exclusively from the Speyside region – abunadh meaning 'The Origin' in Gaelic. Straight from the cask without chill-filtration and alcohol reduction, this whisky is heavy bodied and jam packed full of flavour. Abunadh is not for the faint hearted as with each batch of Abunadh they mature the Aberlour spirit exclusively in Spanish Oloroso Sherry Butts.

Originally filled in ex-bourbon barrels, this whisky was revatted into Californian red wine casks in March 2016 and January 2017. These two vattings have been blended to create a rich and fruity single malt with a distinctive red colour and bags of flavour.

The unabashedly briny opening bouquet is all peat, sea salt and salted focaccia; time in the glass serves to bring out a refined Sherry scent. In the mouth, it’s lean, surprisingly sweet and acutely resiny. Ends pine-like, resiny, moderately salty, fruity (yellow fruit, like yellow plum or banana) and semisweet.

This latest Port Charlotte vats many different kinds of casks together, including bourbon, sherry, French wine, and Spanish Tempranillo. There are lemons and citrus elements on my bouquet. Lots of lemon tart and lemon peel, with a hint of what’s coming with the smoke. There is a sweet grassy weight to the bouquet that reminds me of chamomile tea with honey. The citrus fades away then apples and clementines becoming much more present. And what was gentle smoke becomes sturdier on the finish.

While well known Islay distillery Bruichladdich are famous (infamous!) for pushing the boundaries of distillation, sometimes a true classic is hard to ignore. They have created a malt that is happy-go-lucky, an any time any place kind of spirit. The special feature of Caol Ila Moch; it is the first single malt of the distillery, which was selected exclusively on the basis of its taste, not on the basis of its age, the type of barrel wood, the strength or the finish. For this very reason, the Single Malt is also a good entrée for peaty whiskies, as is well known from the island of Islay.

The bouquet, rather peaty, reveals a pleasant sea freshness. It goes on on fruits, spices and malted barley on a background of floral hints. The palate confirms the bouquet and is slightly peaty. The finish is dryer and is also marked by smoked barley and some salted hints.

Bottlings of Hedonism are made from a combination of eight to 15 casks of grain whisky from distilleries such as Cameron Bridge, one of the oldest continuously operating distilleries in Scotland, and Cambus. Most whisky in Hedonism has been aged in first-fill American oak casks. What a nifty little whisky this is. Very light in colour with nice light grain on the nose. This whisky is light and refreshing with perfect balance of subleties – bready, toffee, green tea, butter cookie, and lemongrass. Smooth and well balanced finish with lingering grain notes.

The Spice Tree is made from Highland malt whiskies which we age in custom-made casks fitted with new French oak heads. We source this oak from a mill in the Vosges which produces some of the highest quality cooperage oak for winemakers. Bolder, displaying oak —there’s dried spice notes and it’s viscous and clinging on the palate. Notes of sticky toffee, vanilla fudge, bramble, and red currant give way to oak resin, cinnamon, clove, nutmeg and subtle lemongrass. A tactile, somewhat resinous, polished leather finish wraps it up.

For those who love big, rich, peaty and smoky malt whiskies, this is your whisky. “The Peat Monster” combines extremely smoky malt whisky from Islay with medium-peated Highland whiskies to create a balanced and approachable monster, but a monster nonetheless. Classic Islay notes—tar, boat docks, brine, smoked olive, seaweed, and kiln ash. More subtle cracked peppercorn, mustard seed, and citrus fruit add complexity, leading to a long, warming finish.
