For their 18-year-old whiskey, Jameson mingles pot still and grain whiskies, ages the blend in Sherry cask then finishes it in first-fill bourbon barrels. The mellow result shows aromas of spice, toffee and apricot followed by flavours of fudge and Sherry nuttiness. A lasting finish, pair with toffee apple cake.

Made from a mash of malted and unmalted barley and then triple distilled in copper pot stills, Redbreast 12 Cask Strength displays the characteristic full and complex flavour of pot still whiskey.
-
One of the most decorated Irish whiskeys, Redbreast is the largest selling Single Pot Still Irish whiskey in the world and is regarded as the definitive expression of traditional Pot Still whiskey. Full of aroma and flavour, Redbreast 12 Year Old benefits from a strong contribution from distillates which have matured in Oloroso sherry casks, giving it its trademark Christmas cake character.
-
Now a permanent expression in the family having originally launched as a limited edition, Redbreast 15 Year Old is matured in a combination of Spanish Oloroso sherry casks and American Bourbon whiskey barrels. Redbreast 15 Year Old is non chill filtered.

Redbreast 21 year old completes a hat trick for Irish Distillers, but this is by far and away the best Irish release of the year. It’s an immense whiskey: oily, spicy, rich, gloopy, and with red berries, menthol, and citrus abundant. It’s complex, too, but you don’t have to live with it long to realize what a gem it is. And very well judged: the oak and spice suggest that these first fill bourbon and sherry casks had reached the edge of a cliff.

Like the man himself, this is altogether more considered and elegant, mixing whiskeys up to 25 years old for a complex experience. Instead, lemon and lime zest, kumquat, and blood orange entwine themselves around vanilla, nutmeg, and soft, drying tannins. No big knockout punches, but it goes the distance and wins unanimously and easily on points.

It’s an outstanding example of Irish, rich and mouth-filling, with a warming, luscious body. The nose is slightly hot, offering hints of honey and cinnamon. The body, however, is far more sophisticated and complex, and not really hot at all. Deep honey notes, vanilla, caramels, and touches of barley. Slightly nutty on the finish, with hints of charcoal and chocolate, too. This is a whiskey that offers tremendous depth, not something you typically associate with Irish, which is often made in a simpler style.
