Clonakilty Distillery founders, the Scully family, have farmed by this coastal land for eight successive generations. A commitment to both heritage and innovation has led us to revive ancient malting barley varieties. Privileged to be guardians of these scarce grains, they nurture them to create a range of whiskies that honours this unique inheritance. Their fields at the base of Galley Head Lighthouse are the perfect environment to nurture and grow the finest of crops. Centuries of sea mist, soft rain and ocean spray provide a complexity to the soil that permeates right through to each individual grain. Their Atlantic Ocean warehouse is ideal for maturing the finest of whiskies. Pure clean air, transported across thousands of miles of the Atlantic, provides a freshness unspoilt by human intervention. It is ever-changing – from wild Atlantic storms, to tranquil sea mist and soft rain. In this micro-climate, a whiskey will only rest for a short while before interacting with the wood and the angels to develop a unique and distinct maritime character.
A unique velvety texture and mouthfeel to each delicious drop. For Minke Gin we go full circle, grass to glass, harvesting nature at its best. Crisp and dry. The palate is fresh n’ fruity, zesty, later the Rock Samphire from our local cliffs becomes obvious with some green fennel-like notes. The finish is slightly salty with red peppercorn on the finish.
