Product Description
The Forest Distillery is a unique 17th century barn, nestled 1,200ft above sea level within the beautiful Macclesfield Forest in the Peak District National Park. It is here that the Bond family and a small team of weasels daily distill spirits of the very highest quality. We predominately use organic and foraged ingredients where possible in our products, and all water used in the process comes from our own cool, clear natural spring. Our goal is to make the best tasting products that we possibly can, from the finest locally sourced ingredients where possible. We do as much as possible by hand – right down to the bottling. Our story began in 2014 when Lindsay & Karl Bond began home distilling tiny batches of spirits from the kitchen table in our home next to Macclesfield Forest. These initial distillations were purely for our own enjoyment, so we threw in handfuls of berries, mosses and ferns which our 6 year old daughter Harriet had foraged from the forest and surrounding hills. Slowly but surely, word spread about our gin, and we decided to decant the liquid into porcelain bottles to see if anybody would be interested in tasting it… We are very proud to say that things have rapidly moved on. The Forest Distillery is now housed within a beautiful stone barn in the Peak District National Park. Our gin is recognised as one of the worlds finest spirits having won an unprecedented two separate double-gold medals at the San Francisco Spirit Awards.
The bouquet shows that moss dominates, filling the senses as though you’d plucked it from a rock and placed it straight into your mouth. There’s a strong taste of fresh spring water – the sort that still hums of earth and nature. The berries come through, although not in a clear way, more a humdrum of fruit riding on a rooty liquorice. There’s a small hint of spice that could well be cassia or cinnamon, such is its light, bright & fiery nature, but Forest Gin tastes incredibly of the forest.
