The vision behind our small Cornish distillery is to make great-tasting spirits with integrity. We aim to do this by going back to basics: using traditional techniques, quality ingredients and old-fashioned equipment. We believe the human touch in everything is absolutely crucial for superiority. What do we do differently to make our spirits taste better? There are only 300 bottles created in each batch, often it is less. This means we can give the proper care and attention needed to turn every bottle into something really quite brilliant. Our still is fired by flame. The myriad of micro reactions in the pot where the copper meets the fire achieves an incredible level of complexity. We do a one-shot distillation, which means exactly the right blend of botanicals is used in every run to make an entirely finished spirit. Extravagant, but uncompromising. Our copper pot still is fired by flame and judged by eye. Our botanicals are selected by sight and feel. Our bottles are all individually filled, corked, sealed, labelled, numbered and waxed by hand. Our spirits are rigorously tested by the bouquet and palate. Our juniper is from Kosovo, it is fresh and earthy/woody, but also quite floral. To complement, we use lemon-sherberty coriander seeds from Bulgaria, rather than the hot and spicy Moroccon variety. The citrus notes come from the fresh fruit zests of sweet orange, lemon and grapefruit, from wherever they are in season. We also use angelica root from Poland, orris root from Morocco, green cardamom seeds from Guatemala, bitter almond from Morocco, cinnamon from Madagascar, liquorice root from Uzbekistan. And Devon violets from the garden.
Firstly, an oily gin with a very rich palate. The palate is very sweet, filled with luscious orange and freshness. This the develops into an roller coaster of flavours, with flashes of berry-fruit (again), floral notes (orris and possibly violets) almond, and generic spiciness, the spices are so well integrated and balanced. Hints of coriander and cardamom. All of this ride is underpinned by a rich resinous juniper. The finish is surprisingly short but is filled with citrus warmth with grassy-green undertones. It’s a dry, slightly peppery, earthy finish.
