Fifty Pounds Gin is produced in a small distillery named Thames Distillery, located in the south-east of London. The method is carried out in a still manufactured by the legendary John Dore & Co Limited, in which a secret combination of botanicals including juniper berries, coriander seed, grains of paradise, savory, orange & lemon peel, liquorice and angelica root, together with grain spirit (a neutral alcohol, previously distilled four times) is distilled.

Our classic gin is a handcrafted premium gin, infused and distilled with 28 botanicals, carefully selected by the Master Distiller. Filliers Dry Gin 28 is patiently distilled in small batches, using traditional copper pot stills at the Filliers Distillery, established in 1880.

Each one of our selected wild botanicals has been ethically sourced, many foraged daily by James, and are native to the Suffolk coast. On the marshland that divides the North Sea from the River Alde, the harsh sea gives way to endless shades and textures of green; hundreds of herbs, grasses and flowers growing within one area. Forest Gin has an utterly extraordinary bouquet; it smells like a forest in the rain. It’s as though you’ve raked your nails down a tree and caked yourself in bark and moss and mud. There’s a sweet, berry note, but it’s masked by the dewy, forest floor feel.

The Four Pillars team draw inspiration from the traditional purple hued sloeberry Gins, taking the pick of Shiraz grapes from each vintage, to craft a brightly coloured, piquantly juniper flavoured Eaux de vie. The felicitous berries are treated to daily stirring over the course of eight weeks maceration, to be bottled without any filtration, for the development of expansive fruit richness and engaging Yarra Valley Shiraz complexity.

When the gin is produced it is transferred to a solera of nine French oak barrels where it rests for a period of time before the master distiller assesses each barrel and creates a blend for release. Added to the botanicals seen in the Rare Dry expression are softer notes of cinnamon and nutmeg and on the palate some delicious flavours of anise and liquorice. This is a gin of good complexity.

Our Sherry cask solera is made up of 42 casks, some from Spain and some from one of our mates who makes famous Australian fortified wines, historically known as “Australian Sherry” and now known as Apera. They’re much older than our Chardonnay barrels, varying in age from 15 to 35 years old. These barrels were first filled more than a year ago, and this is the first solera release taken only from the bottom row of barrels.

Four Pillars Spiced Negroni Gin is a highly aromatic, rich and (yes) spicy gin with great power and intensity. First, we took our base botanicals and upped the amount of Tasmanian pepperberry leaf and cinnamon. Then we added an exotic West African spice called Grains of Paradise. The Old Tom Gin is a smooth, full flavoured Gin that delivers a softer, rounded mouthfeel opposed to the London Dry style. Royal Dock is a Navy strength gin based on the style of gin supplied by the Hayman’s family and previous generations under the mark “Senior Service Gin” to both the Royal Navy and the merchant trade from 1863. Hobart no 4 Gin has a bold character that gives it a welcome uniqueness. The soft citrus aromas by no means prepare you for the flavour which surprises the palate on the first sip with a strong peppery kick. Marconi 46 is an Italian gin artisanally distilled and obtained from a unique infusion of juniper berries, muscat grape, mountain pine, cembra pine, mint, cardamom and coriander reminding of the Asiago plateau in the north of the Veneto region, where the Poli family comes from.

The aroma is fresh pine from the juniper with citrus and lavender notes present. Flavour-wise, this gin isn’t dominated by juniper as with some London Dry gins. The fresh pine is balanced with plenty of spice from the coriander and a slightly sweet finish. Very smooth on the finish.

The name ‘Jindea’ is a portmanteau of ‘Juniper’ and the French words for India and tea, which provides a fairly accurate picture of the brand, as it is made in an alembic still in France, with juniper and first-flush Darjeeling tea as its main botanicals.

After combining 17 botanical ingredients, sourced mostly from Yucatán and selected from other parts of Mexico (with the exception of juniper, which is the sole imported ingredient), the blend is macerated in corn neutral alcohol for at least ten days, it is then poured into a copper alembic handmade in Portugal and a highly perfected distillation technique produces an alcohol of the highest quality. The perfumed substance is then allowed to settle to be later mixed with pure cenote water, filtered and bottled.

KI NO BI is a unique gin produced in an artisanal distillery located in Kyoto, Japan. Elaborated from regional ingredients, its recipe is inspired by the history and culture of the city. KI NO BI, which means “the beauty of the seasons”, is a rice alcohol to which local botanicals including yellow Yuzu, Sansho pepper and Uji gyokuro tea have been added. This Japanese gin is assembled with the famous Fushimi water.
