The barrels for the Clonakilty Port Finish Blended Whiskey are stored on the rugged cliffs in the south of Ireland. The whiskey was blended from 7-10 year old Bourbon cask matured single malt and single grain whiskey. After blending, the whiskey was poured into the Port Wine Cask to give it an excellent finish.

The Clonakilty Distillery’s Single Batch Double Oak is a blend of sourced malt & grain whiskeys that were initially matured in ex-bourbon barrels before being vatted and a non-disclosed percentage of the blend is finished in virgin American oak casks, with the remainder of the blend being finished in NEOC (New Era of Cask) casks, which are hand shaved and toasted red wine casks from the Bordeaux region of France. All the components of this blend are matured in Clonakilty Distillery’s Atlantic warehouses.

A blend of soft, fruity malt whiskies on a bed of rich, sweet grain whiskies. All whiskies aged in first-fill American oak casks to yield the trademark Compass Box style. A nice light nose, honeyed apple sweetness, an herbal (grass? mint?) note, and a surprisingly robust alcohol heat that sings. On the palate, heat hits first and is really a primary component of the taste. Also, less sweet, some juniper and a hint of vanilla. Very light-bodied and subtle.

Bottlings of Hedonism are made from a combination of eight to 15 casks of grain whisky from distilleries such as Cameron Bridge, one of the oldest continuously operating distilleries in Scotland, and Cambus. Most whisky in Hedonism has been aged in first-fill American oak casks. What a nifty little whisky this is. Very light in colour with nice light grain on the nose. This whisky is light and refreshing with perfect balance of subleties – bready, toffee, green tea, butter cookie, and lemongrass. Smooth and well balanced finish with lingering grain notes.

Oak Cross Whisky offers the best characteristics of both American and French oak aging. A rich, medium-bodied blended malt Scotch whisky. Delicate dry spice notes and light body. I’m picking up evenly-proportioned notes of vanilla and coconut, with more subtle notes of clove, anise, and delicate fruit, all wrapped up in a gentle, malty body. A very versatile whisky.

To make Orangerie we begin with great whisky. We use a soft, sweet blend of Highland single malt and single grain whisky from Fife. Secondly, we use only the freshest, highest quality oranges and top class aromatic spices. Importantly, we zest the fruit by hand and use only fresh zest in our infusion. The Spice Tree is made from Highland malt whiskies which we age in custom-made casks fitted with new French oak heads. We source this oak from a mill in the Vosges which produces some of the highest quality cooperage oak for winemakers. Bolder, displaying oak —there’s dried spice notes and it’s viscous and clinging on the palate. Notes of sticky toffee, vanilla fudge, bramble, and red currant give way to oak resin, cinnamon, clove, nutmeg and subtle lemongrass. A tactile, somewhat resinous, polished leather finish wraps it up.

For those who love big, rich, peaty and smoky malt whiskies, this is your whisky. “The Peat Monster” combines extremely smoky malt whisky from Islay with medium-peated Highland whiskies to create a balanced and approachable monster, but a monster nonetheless. Classic Islay notes—tar, boat docks, brine, smoked olive, seaweed, and kiln ash. More subtle cracked peppercorn, mustard seed, and citrus fruit add complexity, leading to a long, warming finish.

The significantly higher age is immediately noticeable in intensity and complexity. Oak tones are overly clear and bring with them a whole load of spices: cinnamon and nutmeg, subtle clove, vanilla, saffron and a very fine smoke also come through. There are more fruit notes, which can be found here, but also rich honey, caramel and coffee and walnuts on a long warm finish.

The peat smoke is well integrated and only limited amounts of Connemara 12 Year Old are made each year.

Launched in 1995 by the Cooley Distillery, it was the first single malt peated Irish. 75% of the barley malt used is peated. Color gold, connemmara reveals amazing. A blind, it evokes nothing Irish style and shows a lot more like a single malt Scotch share his size and aromatic typicality. The elegant and perfumed nose evokes malt and licorice with a slight smoky peat. Creamy and balanced palate confirms the aromas of the nose. The finish is quite long.

Although the new oak is quite high, the light toasting means that it is nicely integrated with the pure blackberry and bilberry fruit; later, a touch of mint develops. The palate shows supple tannins, well-judged acidity, gentle grip and pure blackberry and boysenberry fruit toward the long finish. This is how to make a Bordeaux blend!

At first glance the bouquet shows daring aromas of passion fruit, peach and grapefruit, which unfurl into the most delicate array of spices. Here the tropical facade so slightly fades to expose underlying hints of fennel seed, white pepper and cardamom, neatly strung together by an uplifting, yet delicate perfume of mandarin.
