The nose is very subtle, slowly releasing hints of baked pears, ginger. After a few swirls the bouquet opens up and releases aromas of orange peel, and cinnamon. The palate is restrained and elegant, very much like a fine cognac, the alcohol is beautifully integrated and is balanced by flavours of toffee, oak, and vanilla. The silky finish is long and as it eventually fades leaves you with chocolatey notes.

The rum is aged for 2 years and charcoal-filtered to remove color and impurities. The bouquet is pretty mellow, with a touch of sweetness and fruitiness, but nothing really dominates. It’s a simple, well-rounded aroma. An initial sip shows that it has surprisingly little burn, some sweetness and fruitiness on the finish.

No age statement. The entry level Appleton is a bit rustic and punchy, with some sharp medicinal character to it. Clearly designed as a mixer, this nicely golden rum offers big molasses backed by barrel char notes and some burnt marshmallow. A touch of banana on the back end, but it does give this rum some funky character.

Barbancourt 8 year old rum is light amber coloured with a classic rum taste. The bouquet is sweet, slightly perfumed with just a tinge of vanilla. The palate shows initial taste of bitter candy with hints of spices topped by ginger and orange peel. A bit more oak and vanilla are also revealed.

White rums are usually not aged. Caliche has FOUR different aged rums (3,4,5 and a small portion of Solera – 3 stacked layers of barrels) which add a particular character aroma and depth. Caliche uses the Solera System. There is a 3 layer arrangement of casks. When using Solera rum for production you take the maturate from the lower layer casks, which are the oldest. Those casks are then refilled with product from the casks in the middle layer. Maturate from the upper layer is then used to refill the casks in the middle one to replace what was used

Cockspur XO is a work of art. This vintage rum is aged to perfection in American bourbon-oak barrels and, only then, the best casks are hand-selected by our master-blender. These are then blended together and left to marry in Spanish Oloroso sherry casks.

The significantly higher age is immediately noticeable in intensity and complexity. Oak tones are overly clear and bring with them a whole load of spices: cinnamon and nutmeg, subtle clove, vanilla, saffron and a very fine smoke also come through. There are more fruit notes, which can be found here, but also rich honey, caramel and coffee and walnuts on a long warm finish.
