This latest Port Charlotte vats many different kinds of casks together, including bourbon, sherry, French wine, and Spanish Tempranillo. There are lemons and citrus elements on my bouquet. Lots of lemon tart and lemon peel, with a hint of what’s coming with the smoke. There is a sweet grassy weight to the bouquet that reminds me of chamomile tea with honey. The citrus fades away then apples and clementines becoming much more present. And what was gentle smoke becomes sturdier on the finish.

While well known Islay distillery Bruichladdich are famous (infamous!) for pushing the boundaries of distillation, sometimes a true classic is hard to ignore. White dog is the name that distillers give to whiskeys prior to going into cask. This is true here, and as a result this corn, rye and malted barley creation is bottled unoaked and is therefore clear.

Bulldog gin is distilled in England using a traditional pot still but unconventional botanicals such as dragon eye, poppy and lotus leaves. Other, more conventional botanicals include lemon peel, almond, cassia, lavender, orris, liquorice, angelica, coriander and, of course, juniper.

White rums are usually not aged. Caliche has FOUR different aged rums (3,4,5 and a small portion of Solera – 3 stacked layers of barrels) which add a particular character aroma and depth. Caliche uses the Solera System. There is a 3 layer arrangement of casks. When using Solera rum for production you take the maturate from the lower layer casks, which are the oldest. Those casks are then refilled with product from the casks in the middle layer. Maturate from the upper layer is then used to refill the casks in the middle one to replace what was used
