A pale straw colour, clean intense aromas of fruit and cut grass. The taste is dry yet soft encompassing classic salty notes on the palate with refreshing bitterness on the finish.
-
Dark rich and predominantly sweet with raisins and figs on the bouquet supplemented by coffee, chocolate and liquorice on the palate to give a warm, velvety mouthfeel on the finish.
-
This early release wine is not barrel aged or blended, it is a pure, fresh, grapey example of Pedro and captures all the tanginess of the style before rancio sets in. The palate shows concentrated toffee, caramel and dried fruit notes and the finish is warm and lingering.
-
This sherry is also lush on the palate and is carried by a subtle sweetness reminiscent of caramel and vanilla.
-
A deep mahogany colour. Intense aromas of dried fruits, raisins, figs, and subtle notes of chocolate and coffee. Smooth and velvety on the palate, with great length and balance.
-
The bouquet shows notes of both the biological and oxidative ageing, yeast, bread, but also dried fruits and a hint of toffee, caramel and leather. Very dry, very complex, with a generous body and well balanced acidity.

Pale sandalwood/caramel in hue, with a fresh, brisk, redolently woody aroma. Though appearing to teeter on the verge of volatility by virtue of being so dry and so woody, the blue cheese notes (cachel blue / dolcelatte / cabrales / stilton) lift it into an entirely different level.
