The house of Clicquot was founded in 1772, but owes its current fame to the founder’s remarkable daughter-in-law, Nicole barbe Clicquot. Widowed in 1805, she developed the business both technically and commercially. In 1816 she invented the method by which, to this day, all champagne is clarified. To protect the house from the imitations this spawned, she introduced the famous yellow label by which its wine is recognised around the world.
Veuve Cliquot Grandé Dame Rosé must be amongst the greatest rosé champagnes ever made. Its mousse is fine and long-lasting and its quality and distinction of this vintage are expressed in the intense, elegant nose. Notes of raspberry and strawberry combine with toasted aromas to complement each other to perfection, bestowing an unforgettable bouquet to this wine. The palate then confirms the complexity of the nose, leading to an exceedingly harmonious finish.

Parma Ham, Goats’ Cheese and Rocket Canapés

INGREDIENTS
8 slices Parma ham
8-10 tsp soft goats’ cheese
1 x 70g/2½oz bag rocket
salt and freshly ground black pepper
8 cucumber dill spears, each spear cut in half lengthways
1. Lay each piece of Parma ham on a board, cut off any surplus fat and discard.
2. Spread a good teaspoon of goats’ cheese over the end quarter. Season with salt and pepper.
3. Take a small handful of rocket and lay on top, leaving some of the rocket sticking out of the ends.
4. Lay one piece of cucumber on top.
5. Roll the Parma ham up into a cigar shape and transfer to the fridge until needed.
6. Slice each roll in half and arrange standing up on the cut side on a serving platter. Serve cold
