Sagamore is unique in both its mash bill and proofing process. Each spirit is a blend of two different mash bills – a high rye and a low rye – and then proofed with spring-fed water from the Sagamore Farm Spring House. Fed from a limestone aquifer, this pure and naturally filtered water is crisp and calcium-rich – perfect for making Maryland-Style Rye whiskey.
The bouquet shows a mix of sweet, spicy and earthy notes as warm toasted oak, luscious red fruit, and black pepper rye spice all fall out of the glass alongside cinnamon, caramel, and a touch of herbaceous oak towards the back of the palate. The palate reflects the bouquet somewhat, opening with a sweet deep caramel, intermingled with warm toasted oak spices, a touch of black pepper, strawberries stewed in light brown sugar, and earthy baking spices a-plenty. A dark herbaceous charred oak edge develops with the finish, then opens with lingering spice from the palate before tannic oak and a hint of chocolate emerge, leaving an aftertaste of toasted oak and earthy rye spice.
