In the early 1800s, Maryland farmers treasured rye for its fibrous and sturdy nature, which kept soil healthy and protected the land from erosion. It also made a great quality Whiskey. Sagamore is unique in both its mash bill and proofing process. Each spirit is a blend of two different mash bills – a high rye and a low rye – and then proofed with spring-fed water from the Sagamore Farm Spring House. Fed from a limestone aquifer, this pure and naturally filtered water is crisp and calcium-rich – perfect for making Maryland-Style Rye whiskey.
The bouquet shows dark and broody with clove, charred oak, and faint herbaceous dill taking the lead whilst brown sugar bordering on molasses, a touch of cinnamon, black pepper and lush red fruit notes. The palate opens with a faint viscosity carrying notes of thick deep brown sugar caramel, sweet red fruit and a flash of earthy cinnamon before classic MGP dill and further baking spices including faint cloves emerge. As the other notes fade the dill notes become wrapped up in dark chocolate and peppery oak notes with some heat coming from the rye itself and shining towards the back of the palate. The finish lingers with a kick of spice leftover from the palate before notes of creamy chocolate, faint herbaceous dill, and earthy baking spices emerge and fade to charred oak and a lingering herbaceous and peppery spice.
