We do things a little differently around here – and that’s what gives Jack Daniel’s its distinctive character. We Charcoal Mellow our whiskey drop by drop, then let it age in our own handcrafted barrels. And we don’t follow a calendar. Our Tennessee Sippin’ Whiskey is ready only when our tasters say it is. We use our senses, just like Jack Daniel himself did. In fact, more than a century later, our Tennessee Whiskey is still judged the same way. By the way it looks. By the way it smells. And of course, by the way it tastes. A limited edition version of JD, White Rabbit Saloon is bottled and named in honor of the 120th anniversary of the White Rabbit Saloon, a Lynchburg bar owned by Jack Daniel himself.
Seared corn and caramel can be made out without too much trouble. Light vanilla and hints of butterscotch undulate slowly. Candied cherry and slight waves of banana bread come off on deeper inhales. Chocolate, malt and funky molasses come off the surface of the whiskey after returning from a sip. The bouquet is light and easy with some lovely crème brûlée notes. The palate is grain forward with plenty of classic Jack banana, wet beach towels by the campfire, black tea, vanilla bean, black licorice, and peach marmalade, pressed flower petals and vanilla yogurt. Subsequent sips improve drastically as some of the creamier tones begin to build up on the taste buds. The mouthfeel is on the thinner side, but banana notes do stick around, raw corn kernels and hints of dry earth persist late onto the finish.
