Located just south of Belfast in the grounds of the beautiful Killaney Estate. The distillery takes its name from the nearby town of Ballynahinch, whose name in Irish translates as ‘town of the island’. Within the Hinch Distillery design we have incorporated many unique elements which will both validate our ‘craft’ credentials. The water used in the distilling process at the Hinch distillery will be the cleanest in Ireland — from the Silent Valley Reservoir. The location brings other advantages too. It’s on the main road from Belfast to the Mountains of Mourne which is one of the most trafficked tourist roads in Ireland. And of course, it’s from its hinterland that Hinch gets its moniker. Ballynahinch just up the road is Baile na hInse in Irish (the Town of the Island). The Master Distiller at Hinch has already created a series of blends (from precious whiskey stocks).
Golden straw in colour with burnt copper hues. Lush golden fruit ooze from the glass followed by honeyed barley, sweet and crisp, all wrapped up in the stunning mellowness of both American and Spanish oaks. One providing sweet vanilla and the other the semi dryness imparted by the Oloroso. It has a delightful fresh and very clean fruit and floral bouquet. Only the best butts have been used in the maturing of the Oloroso sherry thus the richness in the aromatics. The palate shows sweet malty flavours are immediately apparent then the dry sweetness of the oloroso emerges slowly with a touch of almond nuttiness with the lushness of the grapes coating the palate like fruit syrup. It’s an arousing pleasure giving experience, and at this age.
