Each bottle of Derrumbes represents a single state and each was chosen to highlight the traditions, the Terroir and organoleptic style of the region where it was made, creating together a mind grabbing experience of variety and nuances.
Derrumbes Zacatecas is made with agave Tequilana Weber, which is also commonly known as blue or azul agave. This agave is well known for it’s use in Tequila, and the town of Huitzila, Zacatecas, where this mezcal is made, is very close to the Tequila Valley. The town is more well-known for Mezcals, it is pit roasted, Tahona milled, and traditionally fermented and distilled. A big peppery hit backed up by green and leafy touches that peek in around the sides. Mineral notes build, with touches of rich earth and gentle barbecue smoke. Sweet and rich. Candied orange mix with flamed orange zest. Pepper and earth provide a savoury backing, with chocolate notes and a gentle wisp of wood smoke playing a counterpoint. Fruity roasted agave sits underneath. Soft smoke fades to reveal umami richness and a hint of sweet mint.
