Nestled in the Stellenbosch winelands, the Cavalli wine and stud farm is recipe a relative newcomer to the historic region. This has given the owners an opportunity to develop with a focus on sustainability and biodiversity. Being in such close proximity to the ocean, the Cavalli vineyards benefit from the cooling breeze off False Bay. The unique terroir consists of coarse de-composed granite topsoil on a mid-layer of ‘Koffieklip’ and clay subsoil, which is a perfect environment for the vineyards to produce wines with expressive fruit and elegant structure. All vines are 100% from the Vititec motherblock plant material, resulting in virus free vineyards with optimal growth potential to produce outstanding wines. At Cavalli, the goal is to achieve the highest standard in the vineyard, so that minimal intervention is required in the cellar to make world-class wines where the product is true to terroir. Focus is as much on elegance, as power and expression of terroir.
Ruby red in colour. The bouquet shows concentrated aromas of fresh plum, black-forest cake and cedar spice. The palate shows a delicate mid-palate with soft, rounded tannins that complement a well-balanced acidity on the persistent savoury finish.
