Each one of our selected wild botanicals has been ethically sourced, many foraged daily by James, and are native to the Suffolk coast. On the marshland that divides the North Sea from the River Alde, the harsh sea gives way to endless shades and textures of green; hundreds of herbs, grasses and flowers growing within one area. Each botanical is carefully considered, picked and dried at the optimum time for the best impact on our flavour and aroma. Like the wild seas that inspire us, our botanicals cannot be truly tamed. Every batch of Fishers will be slightly unique in its creation and singular in its flavour. Fishers is a genuinely artisanal product working perfectly alongside nature itself.

Kokoro is a London Dry Gin distilled with eight botanicals, that are juniper, coriander, angelica, sweet orange, almond, liquorice, savory, lemon peel and fresh Sansho berries imported from sustainable sources in the Afan Woodland of Nagano prefecture, Japan. Sansho berries are used extensively in Japanese cuisine and have a distinctively earthy black pepper flavor with a piney citrus aftertaste. Close your eyes and think of the forest – that’s where our heart is.

A delicate and complex gin, bursting with floral overtones, with a strong Juniper, sweet citrus and grapefruit taste leading into more intense floral and citrus notes. The bouquet is very light and floral and very delightful, it`s like a whiff of light perfume. The taste is complex, light on the juniper but it´s definitely there, lightly spicy and floral. The palate is gentle, there´s no burn and its easy to drink.

Royal Dock is a Navy strength gin based on the style of gin supplied by the Hayman’s family and previous generations under the mark “Senior Service Gin” to both the Royal Navy and the merchant trade from 1863. This Navy strength gin, bottled at 57%, reflects the strength required to enable gunpowder to still light if the gin were spilt on it.

We measure, by hand, just the right balance of juniper, coriander, lemon peel and orange peel, as well as angelica, orris root, cinnamon, cassia bark, nutmeg and liquorice. Then steep those botanicals in English wheat spirit for a whole day prior to distillation, which allows the oils and essences to infuse fully. Such care and attention, and the following of original methods, ensures that Hayman’s London Dry Gin remains a classic gin. Fresh, crisp and elegant, with a lively citrus finish.
